Just came across a very nice tip thanks to C|Net AU.

If you have an iPhone, and you’re running the v2 software you can easily take a screen shot. App, text message, web page, menu, it doesn’t matter. Simply hold down the home (square) button and press the sleep/wake (top) button. The screen will flash, and the image will be saved to your camera roll. Nice! Not sure if this works with the iPod Touch, but I don’t see any reason why it wouldn’t.
